Up the back stairs of a 130-year-old teakwood mansion near Tha Phae Gate, a candle-lit room is doing some of the most interesting things with cocktails in Chiang Mai.
North Country calls itself a saloon-inspired cocktail bar, but that undersells it. The space is intimate and warm — a polished slab-wood counter spanning nearly the full length of the room, surrounded by the original teak walls of the mansion, unaltered and glowing in candlelight. It feels like drinking in someone’s very well-appointed attic, if that attic had a world-class bartender.
What sets North Country apart is its commitment to Northern Thai ingredients sourced from the mountains around Chiang Mai. Rare coffee and tea from small villages on Doi Angkhang and Doi Inthanon find their way into cocktails that taste like nowhere else. One pairs apple and clarified Greek yogurt with green tea. Another uses three kinds of local rice. The menu changes, the ingredients stay hyper-local, and the flavours are unlike anything you’ll find in Bangkok.
The presentation is deliberately simple — no theatre, no smoke, no garnish towers. The complexity is in the glass. The bartenders are proud northern Thais who know these ingredients because they grew up with them, and they’re happy to walk you through the story behind each drink.
What to order: Anything with mountain coffee or tea. These are the drinks that define the bar’s identity.
Best for: Serious cocktail drinkers who want to taste something they’ve never tasted before. The perfect complement to Noir’s jazz-driven energy nearby.
